Hokkaido Scallops are harvested off the northern region of Hokkaido in Japan. The area where they grow is full of nutrients, and plankton-rich waters, it allows the scallops to develop like no other from the same specie. Sushi chefs around the US choose these Hokkaido Scallops because of its unique sweetness, and firmness.
